| @indiablooms | May 22, 2018, at 09:43 pm

Kolkata, May 22 (IBNS): If you are keen to taste some authentic royal Rajasthani cuisine in Kolkata, you have time until May 27.

Chef Bheik Singh, of Jaipur Marriott Hotel, who has learnt the art from the royal kitchens of Rajasthan, is curating a food festival -- Taste of Rajasthan -- at the JW Marriott Kolkata.

A resident of Balesar village in Jodhpur, he began his career from Taj Umaid Bhavan Palace. Some of his signature specialties include traditional 'Laal Maas’, ‘Papad ki Subzi’, ‘Chakki ki Subzi’ and ‘Dal Baati Churma’.

Influenced by the dearth of water in this desert state of India, the harsh climate and the urge to preserve food as much as possible have left their mark on the cuisine of the state, which can be seen to some extent at this eclectic food festival being held at the JW Kitchen.

Signature dishes at the festival in Kolkata include ‘Laal Maas’, ‘Gatte ki Subzi’, ‘Dal Baati Churma’, ‘Jodhpuri Murgh’, ‘Govind Gatta Curry’, ‘Ker Sangri ki Jugalbandi’, among others. Desserts include Ghevar and Mava Kachori.
