Author interview: Sourabh Angarkar talks about his book 'Importance of Slow Cooking'

Culinary expert Sourabh Angarkar explains why slow cooking is important and how you can use sous ide machine to get the job done well

Congratulations on the release of your new book ‘Importance of Slow Cooking’. Tell us something about this book. What is the book about?

Thank you. I want to thank each and every one for helping me complete this project.  For many years, slow cooking was the best way of cooking food which many of us have forgotten. This book gives the reader a clear picture on how slow cooking is the best cooking. This book also has a few recipes on slow cooking which is time-taking but very effective, using the sous vide machine, which people think is complex, but it is not.

Is it a cookbook? Who are your target readers? Upcoming chefs, ordinary readers or professional chefs?

Yes. It is a cookbook and it also talks about methods of the basics of a sous vide machine and how to use it, which makes it easy for home cooking. My main aim was to target home makers. Many of the restaurants have been using sous vide cooking for cooking meats but why not try this at home? This book has many details about food in it; hope readers will love it.

There are other cookbooks in the market; how is your book different from them?

Most cookbooks I found give readers information about food recipes and the methods to make them. But the book which I have authored has in-depth details on bacteria, causes of bacteria, temperatures of cooking different meats; also, on how food reacts in different modes of heat transmission, also about proteins, carbs.

Penman Books is the publisher. I want to thank Tarun Singh and his team for creating this publication. And also wanted to thank my photographer Pearl Lorentzen (Slave Lake, Canada). The paper back is available on Amazon.ca (Canada).  People in India can enjoy kindle version on Amazon.in.

You are also into other activities. When do you find time to write? Do you have other books? What are they? Or do you have other books planned on a similar subject or other subjects?

Yes, I do have so many other activities, one of the hardest part is being a cook. Where you have to cook in the kitchen and work for many hours, but most of the time I read books, I want to learn more to gain more knowledge, I learn new things by making a mistake. But somehow I make time for me to write a book. I have two earlier published books, which are cookbooks, published by Power Publishers in India.

My next project has not been confirmed yet, but it will be on food and cooking.
