G T Route cuisine connects East and North-west, invokes Sher Shah

Kolkata, Sept 17 (IBNS) Tracing the journey along the 1004 km long Kolkata-Lucknow G T Road, bearing the memory of Sher Shah Suri, a road themed restaurant now serves on platter the PESHAWARI, PUNJABI, AWADHI cuisines with BENGALI delicacies, thus tickling the taste buds of the foodies here.

“In our place, having the décor of the primitive looking Sadak-e-Azam by Sher Shah (1486-1545) dotted with ‘Saraikhanas’ and horse drawn carriages, with gas lamps and poorly-lit road to recreate the ambiance, we will be serving the Dal Lashoon Ka Shobra, Peshawari Paneer Tikka & Peshawari Murgh Tikka from Peshawar, Narkel Postor Bora, Sonali Moong Dal, Posto Murgi, Dab Chingri from erstwhile Bang Prodesh, Murg Hazrat Mahal, Dal Dum Niyazi, Aloo Gobi ki Tehri, Sheermal & Mutton Makhmali from Oudh, Chopan Kebab and Bulanee from Kabul, Chapli Kebab and Kabuli Pilaf from Afghan and Mawa Bhara Kumbh & Kadhai Sabzi from Punjab,” Ishtiaque Ahmed, Director, Shiraz Hotels Pvt Ltd, tells IBNS.

‘The GT Route’ will thus be a blend of the five different cuisines, ranging from Kabul across to the Peshawar, Punjab, Oudh and ending at Kolkata mirroring the road which had been an integral part of the Indian history, since its emergence, and had contributed largely to the growth of a rich food history.

“The food will be a mix of ethnic rugged looks blended with modern and contemporary designs,” he says.

“With emphasis on authenticity, our chefs play with the nuanced differences in the iconic cuisines that had been savoured in different areas along the thousand year old road as tandoori chicken will vie for attention with Dab Chingri, and Kesar Pista Phirni, Husn-E-Ara with Rasogolla and Misti Doi,” he says.

“Even in a first for a Mughal-era genre cuisine restaurant, we will be serving delicacies like Anarash Ilish and Ilish Bhapa, besides Biriyani and Pulao dishes with Ilish preparations but we will not be introducing Shukto since that will not gel with our other dishes,” Ahmed says.

Meal for two costs Rs 800/- plus taxes.

Timings: 12 noon to 4 pm and 7 pm to 11:30 pm.
